Amaretti (Macaroon)
I kept trying to come up with a Macaroon recipe that would pass approval of my mom. So I combined several recipes to come up with this easy but tasty version.
Amaretti (Almond Macaroons)
2 7-ounce packages shredded coconut
2 teaspoons almond extract
1 14-ounce can sweetened condensed milk
1 cup almonds (in food processor until consistency of coarse meal)
Mix all ingredients. Drop from teaspoon onto cookie sheet lined with parchment paper. Flatten slightly. Bake 350 degrees for 10-12 minutes. Cool completely.
Melt 1 bag (12 ounce) semisweet chocolate chips in microwave in uncovered, microwave-safe bowl for 1 minute, stir. Microwave at additional 10- to 20-second intervals stirring until smooth. Dip bottoms of macaroons in chocolate. Put onto foil. Slide foil onto baking sheets. Refrigerate until chocolate sets peel macaroons off foil. Refrigerate tightly covered with wax paper between layers up to 1 week.
