Aunt Jen's Molasses Cookie
Melt together and cool:
1 Cup Unsalted Butter
1/2 Cup Margerine
In a different bowl,Mix together and set aside:
4 Cups All purpose flour
1 Tablespoonful Baking Soda
1 Tablespoonful Sea Salt
1 Teaspoonful Cinnamon
1 Teaspoonful Ginger
1 Teaspoonful Ground Cloves
Together with the cooled oils mix (really whip to a light color)
1 1/3 Cups Brown Sugar
2/3 Cups White Sugar ( Sugar totals 2 cups )
1/2 Cup Dark Molasses
2 Eggs
Fold or beat in very gently the dry ingredients. Chill overnight. Roll into balls the size of walnuts (but I have made then up to 4 oz.) Roll in Sugar. Press down slightly in cookie sheet and bake at 325 degrees for 8 minutes, or until UNDERDONE. Cool a minute on sheet and slip onto paper bag.
My great aunt Jen Vallender was born in England and moved to Michigan when she was about four. She always dropped her 'H' when she spoke. " 'ere we go into the 'ouse! Let's 'ave tea and cookies!" As one of the oldest she helped raise her 12 other brothers and sisters and never got a formal education. Aunt Jen was what we called a spinster. She worked for more than 25 years as a housekeeper for a pharmacist and his wife in Flint, Michigan before returning to the family farm and living out her days helping raise her own nieces and nephews. For Aunt Jen these cookies were a little different every time- she used lard for shortening and was only extravagent using oleo at Christmas. The sugar just had to be a total of 2 cups, so she always went a little 'eavy on the brown.
My husband and I have three daughters. They have formed the Everlasting Pod which includes many of their friends who have lived in our home during unfortunate times in their own family. I would guess at least 2 dozen have passed through our home at one time or another. That's why my email is podmom.
Now,I bake cookies for our local coffee house. Empire is a town of 400 people with a million passing thru the National Lakeshore in the summer. Everybody loves Aunt Jens Molasses Cookies and I share the recipe anytime someone asks.
Jen would have liked that I share her cookies. She probably would have said, " 'eavenly days! Let 'em 'ave as many as 'e wants.
