Bountiful Blueberry Cookies

This recipe started out because I'm a dietitian and I was trying to make a cookie with some healthy attributes in addition to tasting good. The flax and walnuts add omega 3 fats, the coconut and oats add fiber, the blueberries add antioxidants, and the dark chocolate - well what is a cookie without chocolate, plus it is dark chocolate so it is good for you. My family and I think they taste so good, it is hard to recognize that there is healthy stuff in their too.

Recipe:

2 c Flour
1 c Oats
1 tsp Baking Soda
1/2 c Ground Flax Seed
2 sticks of butter
2 Eggs
1 1/2 c Brown Sugar
1 tsp of vanilla
1 c of Stone Ridge Orchards Whole Dried Blueberriesv 1 c Dark Chocolate Chips
1 c Walnuts

Preheat oven to 350 degrees F. Grease cookie sheets. Mix first four ingredients and set aside. Mix butter, eggs, brown sugar and vanilla until well blended. Combine with flour mixture. Add blueberries, walnuts and chocolate chips and blend. Spoon out in 2 tablespoon heaps. Cook for 9 to 11 minutes.
