Choc. Covered Strawberry Cooki
4 ounces unsweetened chocolate
1 c sugar
1/2 c oil
3 large white eggs
1 1/2 tsp vanilla
2 c flour
2 tsp baking powder
1/4 c strawberry jam
1/2 c fresh strawberries washed and cut
1/2 c chocolate chips, melted
*Preheat oven to 375 degrees. In a sauce pan melt the unsweetened chocolate. In a large bowl, mix together sugar, oil, eggs and vanilla until well blended. Add melted, unsweetened chocolate and mix well. In another small bowl, mix together flour and baking soda, then add to chocolate batter and mix together well. Line cookie sheets with parchment paper. Roll batter in small balls (about a quarter-size in diameter). Place each ball on cookie sheet. Lighty press thumb into each cookie making a small dent. Fill each dent with about 1/2 tsp of strawberry jam. Bake in oven at 375 for 7 mins. While cookies are baking, in a double boiler, melt the chocolate chips and wash the fresh strawberries and cut into small bit-size pieces. Dry berries gently. When the cookies come out of the oven, place one strawberry piece in the center of the warm jam of the cookie, then top with about 1/2 tsp of melted chocolate chips. Allow to cool and enjoy!!
Store cookies in the refrigerator. Yields about 36 cookies.
***My personal story with this recipe is simply that I just enjoy creating new recipes with my 8 year old daughter Emma. We were looking to make a new cookie recipe that would taste yummy and that we could make easily. We thought it would be fun to have the "strawberry surprise" in the middle of the cookie. These could be used any time of the year for any occassion. We love to bake together and feel it is a true bonding experience. We hope to have our own business together someday!!
