Chocolate Bittersweets
This was a recipe that my grandmother used to make when I was a kid. When I got married, I was looking to make some "old" family recipes for my first holiday baking "spree". I remembered this holiday favorite. My kids love this cookie, and whenever I bring it to a cookie exchange, I always make sure and bring the recipe. You coukd definitely make this cookie anytime of the year, but for me it's a tradition to just have it at Christmas time.
Chocolate Bittersweets
1/2 cup butter
1/4 tsp salt
1 1/4c flour
1/2c powdered sugar
1 tsp vanilla
*cream the butter, add the sugar, salt, and vanilla. Cream together. Add flour. Shape into walnut size balls, place on a cookie sheet. Press center of ball with thumb. Preheat oven to 350 degrees. Bake 12-15 minutes until barely golden.
Nut Filling:
3 ounces softened cream cheese
1c powered sugar
2 tablespoons flour
1 tsp vanilla
1/2c walnuts
1/2c coconut
*Fill the cookie with the filling while the cookies are still slightly warm.
Chocolate Frosting:
1/2c semi-sweet chocolate chips
2 tablespoons butter
*melt the chocolate abd butter together, then remonve from heat and add 1/2c powered sugar. Beat until smooth and frost the cookie.
Makes 24-30 cookies.
This was a recipe that my grandmother used to make every Christmas. When I got invited to my first neighborhood cookie exchange about 10 years ago. I knew that I definitely wanted to make these cookies. Sure enough, everyone wanted the recipe. I make these cookies every year for Christmas, as well do other family members. You could really make these cookies anytime of the year, but for me,making them for the holidays makes them seem extra special.
