Chunky Maple Apple and Walnut
This recipe came to me as an experiement. I wanted to use the maple flavor combined with the taste of apples and the crunch of walnuts. Ever since I first experiemented with this recipe, I have been receiving several requests!!
1/2 cup butter, softened
1/4 cup sugar
1/2 cup firmly packed brown sugar
2 tablespoons applesauce
1 egg
2 teaspoons maple syrup
1 cup all-purpose flour
3/4 cup quick-cooking or old-fashioned oats
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
1/2 cup apple, peeled and diced
1/4 cup walnuts, chopped
1/4 cup raisins
1. Preheat oven to 350 degrees F.
2. In a large bowl, combine butter, sugars, and applesauce. Beat at medium speed, scraping bowl often, until creamy, about 2 minutes. Add egg and maple syrup and continue beating until well mixed. Reduce speed to low and add the flour, oats, baking soda, and cinnamon until well mixed. By hand, stir in the apple, walnuts, and raisins.
3. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake for 10-12 minutes or until edges are lightly browned. Cool completely.
