Coconut Oatmeal Cookies
Beat together:
1c oil
1c sugar
1c brown sugar
2 eggs
Then add:
1t vanilla
2c flour
1t soda
1t baking powder
1t salt
Add to the batter: 2c oatmeal
1c coconut.
Drop onto greased
cookie sheet or parchment
Bake @350 degrees F for 15 min
As a poor college student, my friends and I would get together on Saturday nights for dinner, dessert and games. While many of our fellow students were attending Keggers, we were enjoying good food, fun and each other's company, without the hang over. This recipe was a favorite that I modified by using oil instead of butter, since it was cheaper and easier for me to cook with. Someone had given me the recipe, but I can't remember who or when.

I forgot how easy these cookies are to make!! I prefer using sweetened coconut, but some people like them with unsweetened coconut (for less sweet with fewer calories.) Definately use the quick oats for a better texture. My daughter, Emily thinks the cookies should only be baked for 14 minutes, so they'll be more chewy less chrunchy. (Emily, Leah and Sarah agreed that the raw dough is almost as good as the baked cookie, but I wouiln't recommend it both because they have raw eggs and mostly because it means less baked cookies 8^)
