Coconutty Cookies

This is the lazy person's recipe. It's short and simple and super sweet. It takes one mixing bowl, 1 measuring cup, a fork, a spoon and baking sheet. A friend who doesn't cook much gave me the bones of the recipe. I added a few things to it...

1 cup peanut butter
1 cup sugar
1 cup coconut flakes
1 cup semi-sweet chocolate chips (I prefer the minis)
1 egg

Mix it up, plop spoonfuls on an ungreased cookie sheet, mash w/fork to get the traditional peanut butter cookie look and bake at 375 degrees for about 8 minutes. After that, it's all over but the eating. Tastes great alone or with vanilla ice cream.
