Cranberry Nut Bellybusters

Cranberry Nut Bellybusters

My father-in-law was a cranberry grower, so I always tried to incorporate cranberries into my baking. Although his favorite was Cranberry Pie, he really enjoyed these cookies. They are a hit at work, as well!

Cranberry Nut Bellybusters

1 cup softened butter
1 cup sugar
1 teaspoon baking powder

1 teaspoon vanilla
1 egg
2 1/2 cups flour
8 oz. package of Hershey's Premier White Chips and Macadamia Nuts
1 1/2 cups Craisins or other sweetened dried cranberries

1. Preheat oven to 325 degrees
2. Cream butter and sugar.
3. Stir in salt, baking powder, vanilla and egg.
4. Add flour and mix until dough forms.
5. Stir in white chips, nuts and cranberries just until blended.
6. Shape into balls (about 1 1/2 to 2" diameter), flatten slightly, and place on silicone lined baking sheet. 7. Bake at 325 degrees for about 20 minutes.
