Fat/Sugar Free Oatmeal Raisin
Blend together the following:
1 C each 'SPLENDA' white & 'SPLENDA' brown sugar
2 Egg whites
4 oz tub 'Real Smart' Margarine.
Stir in 1C self rising flour &
1 C Instant Oatmeal.
add 1 C raisins and optional 1/2 C walnuts.
Mixture should be stiff.[If too stiff had Tablespoon of Fat Free milk]. Use Fat Free Pan spray oil on cookie sheet. Arrange Tablespoon size pressed drops on cookie sheet and bake until brown* 10-15 min at 375 degrees F...Cool and eat...YUM!!! *Careful , if over cooked they become bricks.....
Reason: I have Type-2 Diabetic with high cholesterol who likes cookies. I have had to alter all of my favorite recipes for this reason....I have also eliminated Sodium from my diet and substituted Potassioum Chloride because of a history of heart problems.... in a nut shell... HEALTH REASONS. I have not given up my favorite, only made them healthy....
