Flaky Oatmeal Meltaways
1 cup brown sugar
1 cup white sugar
1 cup shortening
1 cup oil
1 egg
1 Tablespoon Milk
1 Teaspoon Vanilla
3 1/2 cups flour
1 Teaspoon each soda, salt & Cream of tartar
1 cup corn flakes
1 cup oatmeal
Cream sugars, shortening and oil. Blend in egg, vanilla and milk.
Sift 1 cup of flour with soda, salt & cream of tartar and blend into mixture.
Blend in the remaining 2 1/2 cups of flour. Stir in the oatmeal and corn
flakes. Drop by spoon onto greased cookie sheets and bake at 350 degrees F
For 8-10 minutes until lightly brown around the edges, remove from
oven and let cool on the sheets.
For variation, I have added 1 cup pecans or 1 cup butterscotch chips.
This recipe was my mother-in-laws and became one of my children's favorites. Over the years, I have explored and added different ingredients but the basic cookie remains a mainstay for my family. The first thing my children and grandchildren ask when the come to visit is "what cookies do you have aound the house?" Now that I live alone, I try new recipes and take them in to my "kids" at work. I love the aroma of food and especially desserts baking in my home. When I am stressed, I head to the kitchen to bake up a treat and share my love through that.
