Harvest Oatmeal
Harvest Oatmeal Cookies
Yield: 28
3/4 Cup Raisins, Golden and Regular
1/4 Cup Dried Cherries
1/4 Cup Dried Cranberries
1/4 Cup Dried Apricots, diced
2 1/2 Cup Flour
1 teaspoon Baking Soda
1 teaspoon Salt
1 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1/4 teaspoon Cloves
1 Cup Margarine, soft
1 Cup Granulated Sugar
1/2 Cup Light Brown Sugar, packed
2 Eggs
1 teaspoon Vanilla Extract
1 1/2 Cups Oatmeal
1/2 Cup Walnuts, broken into pieces
1/2 Cup Pecans, broken into pieces
Plump dried fruits in 1 cup water using microwave-safe container by microwaving on high one minute and allow to sit for 4 or 5 minutes. Drain and removed excess moisture with paper towel. Sift dry ingredients. Cream margarine, sugars, eggs and vanilla. Mix with sifted ingredients. Add oatmeal, nuts and plumped fruit. Refrigerate at least 2 hours - overnight is great too. Bake on ungreased cookie sheets at 325 degrees for 16-18 minutes, depending on your own oven. Cookies should just begin to brown but don't overbake. Store in refrigerator in airtight container. These freeze very well too.
