Kahlua Cookies
1 dark chocolate cake mix
2 eggs
1/2 C. Butter
1/3 C. Kahlua
1 Box Instant chocolate fudge pudding mix
1 8oz bag chocolate chips
3/4 C. Chopped nuts (walnuts, pecans, or macadamia)
Instructions:
Melt butter. Beat eggs and add kahlua. Then add the melted butter to the egg mixture. Add cake mix and beat for 2 minutes. Stir in nuts and chocolate chips. Add instant pudding. At this point batter will be very stiff. Refrigerate for 1 hour. Roll into balls and then roll the balls in granulated sugar. Place on a greased cookie sheet. Bake at 350 degrees for 12 minutes. Do not overcook, as cookies should be very chewy.
These cookies are absolutely delicious. They are so chocolaty, and the kahlua gives them their distinctive taste. I like to use walnuts in this recipe, they seem to go well with chocolate. Whenever I take these cookies to a function, I am always asked for the recipe. My mother, the best cook in the world, gave me this recipe years ago. I assume she received it from her mother.
