Kathy's Oatmeal Pecan Cookies

Kathy’s Oatmeal Pecan Cookies

Preheat Oven to 400 degrees.

1 Stick of Butter, melted
2 Cups Brown Sugar
½ Cup of Granulated Sugar
2 Eggs, beaten
2 Tsp. Vanilla
2 Cups of Rice Krispies
2½ Cups Flour
1 teaspoon salt
½ Tsp. Baking Soda
2 Cups Oatmeal
1 ½ Cups Raisins
1 ½ Cups Pecans, chopped

Melt butter on stove. Add Sugars and Vanilla. Allow to cool slightly. Pour Eggs gradually into butter mixture, making sure to incorporate each egg and to make sure that the eggs do not scramble in the mixture. Add Rice Krispies. Combine dry ingredients. Gradually add dry to wet ingredients until dough forms. Remove from mixing bowl and chill before baking. Drop onto ungreased cookie sheet. Bake for 7-8 minutes @ 350 degrees.

This cookie was created quite by mistake. My son Alex (then 4 years old. He's now 6) and I were working on our Christmas Goodies Basket, which is our Christmas Gift to family and friends. Alex has always been very excited about helping out in the kitchen and was proud to be able to say that he had helped make the gift baskets that year. At the time, I was mixing a batch of Oatmeal Raisin Pecan Cookies (pecans are my secret ingredient. I love pecans and anywhere I can add them I do.) I stepped away to grab the raisins and left Alex measuring out cups of Rice Krispies, because those treats were also included in our basket. Seconds after turning away, I heard Alex say "Uh oh". I remained calm and turned back to see what looked like a small mountain of Rice Krispies treats sitting atop my Oatmeal Cookie dough. Alex was on the verge of tears because he thought he had ruined Christmas. I calmed him down and assessed the damage. I was able to remove about 2 1/2 cups of Rice Krispies from the bowl, but in an attempt not to make him feel like all was lost, I told Alex, "Let's just see what happens if mommy leaves the rice krispies in and adds a bit more brown sugar and a bit more butter." This seemed to cheer him up a great deal as he has always enjoyed inventing things (maybe it's all those episodes of Dexter's Lab on Cartoon Network. I went ahead as planned with the cookies and baked off a batch. To our suprise, the cookie was not only good, it was delicious. The addition of the rice krispies gave the cookies a different texture crunchy and chewy. We went ahead and added them to that years basket. The response from family and friends was overwhelming and now every year since we've made sure under penalty of disownment, to keep those cookies going. I no longer make Oatmeal Raisin cookies. Now I make Oatmeal Raisin Pecan "Rice Krispies" Cookies.
