Molasses White Chocolate Chip Cookies
I am a stay at home mom of a toddler and an infant, the wife of an orthopedic surgery resident, and a bake-a-holic! On our budget we have to be creative with our choices for family fun. We spend most of our free time with other families going through their medical training. This is a challenging time for these families, with little free time, money, or sleep! Our favorite times with our family and friends are spent crowded into our kitchen, making cookie dough, and waiting for the sound of the oven timer letting all of the toddlers and moms and dads know that the cookies are done. It is amazing how much joy cookies can bring! We took a poll and this recipe was the hands down favorite! The recipe was handed down for several generations in my family. The aroma, the appearance, and the taste conjure up the cozy feeling of being at home-something very precious to all of us!
Molasses White Chocolate Chip Cookies Recipe
3 cups of all-purpose flour
2 TBL baking cocoa
2 1/2 teaspoons ground ginger
2 teaspoons ground cinnamon
1/2-teaspoon ground cloves
1/2-teaspoon ground nutmeg
1-cup (2 sticks) butter softened
1-cup brown sugar
1 cup unsulfured molasses
2 teaspoons baking soda
1/2 cup granulated sugar
2 cups white chocolate chips
1. In a bowl sift together flour, cocoa, ginger, cinnamon, cloves, and nutmeg.
2. In the bowl of an electric mixer, fitted with a paddle attachment, beat butter and brown sugar until well combined. Add molasses until well combined.
3. In a small cup, combine baking soda and 3 teaspoons of boiling water. Beat half of flour mixture into butter mixture. Add baking soda mixture and then the rest of the flour mixture. Mix in white chocolate chips.
4. Wrap dough in plastic wrap and refrigerate until firm.
5. Preheat oven to 325
6. Roll 1-inch balls in granulated sugar and place on parchment lined baking sheets. Bake for 10-12 minutes, or until you see cracks form in the surface of the cookie.
7. Cool on a wire rack
