Oatmeal Chocolate Chipper
1/2 cup softened butter (1 stick)
1/2 cup brown sugar (firmly packed)
1/2 cup sugar (granulated)
1 egg
1 tsp. vanilla
3/4 cup flour (half white, half whole wheat)
1/2 tsp. baking soda
1/4 tsp. salt
1 1/2 cups oatmeal (old-fashioned is healthiest quick-cooking works okay)
1 cup semi-sweet chocolate chips
Heat oven to 350 degrees. In large bowl, beat butter and sugars until creamy. Add egg and vanilla beat well. Add combined flour, baking soda and salt. Add oatmeal. Stir in chocolate chips. Drop dough on a cookie sheet with room to spread. Bake for 12-14 minutes. For something more thick and chewy, bake in a muffin cup in muffin pan. Remove muffin cups before serving. Can also be baked in one pan as a bar. For those with dairy allergies: substitute one stick of regular Crisco vegetable shortening (NOT butter flavored).
One of my goals in life is to raise three HEALTHY children. With the childhood obesity statistics facing our nation's children, I strive to include healthy food items in our daily menus as much as possible. The recipe I have submitted is a great source of whole grains, and yet, is so tasty and flavorful, everyone is sure to love it! My daughter took these cookies to school to celebrate her birthday, and her classmates loved them. Give it a try--I'm sure there are lots of people who would love to take a break with a healthy cookie!
