This is the best cookie, I don't even like peanut butter sandwiches, but cookies! and oatmeal! and chips and nuts! The texture is great and the peanut butter does not stick to the roof of my mouth. This is a winner! and gets my vote.

The Cookies came out great! I only had two eggs so I went ahead anyway. They were kinda' falling apart as I was placing them on the cookie sheet but after they were done and had rested a bit they were just like. . .Great! Thanks for such a good cookie and no flour! wow.

For people who are allergic to nuts, try substituting soy butter (available at Walmart near the peanut butters). It does not come in a "crunchy" variety, but it actually has a similar taste and texture to peanut butter, and is completely nut free. I have had great luck substituting it in recipes similar to this one. Maybe Carrie could make a whole batch of Oatmeal Soy Scotchies just for "Bob"!

Can somebody please tell me how much 1 1/2 cups of chunky peanut butter is converted into grams. I am dying to try this recipe, but as i am from the uk we don't use cups!! I managed to work out everything else..just stuck on this last ingrediant!! I am sure they r yummy!!

This is a great cookie! I don't really like chunky peanut butter so I went ahead and just used the creamy kind. And I don't care for butterscotch chips so I used chocolate chips instead. The cookies turned out awesome. They're peanut buttery and chewy and everyone that tried them just loved them.
