Peach Cranberry Almond Oat

28 min. @ 300 degrees or until brown.

1 2/3 c all purpose flour
2 c oats
1/4 tsp salt
1/2 tsp. baking soda
1 1/4 c white sugar
1/4 c light brown sugar
1 c salted butter
1 large egg
1/2 c pureed peaches
1/4 tsp lemon juice
2 tsp extract
1 c slivered almonds
1 c cried cranberries

At 5 years old I learned to bake from my Grandma Rose. She was an insanely creative woman. She used to dance, act, bake, cook and was always the life of the party. Cut to about 25 years later when it hit me. I've been baking for friends, family & parties my whole life. Why not turn that into a business? So, I set up my journey to open a cookie company. Now I needed recipes. So I asked myself "What would I like?" and came up with insane flavor combinations. Looks great in my head, but how the heck was I going to create a peach cranberry almond oat cookie? As Deon Warwick used to say, that's what friends are for. After a while my friends couldn't eat any more cookies, so I turned to co-workers and anybody who would give me an honest opinion. I finally nailed down the recipe and 5 others and opened a small gourmet cookie company called Freshly Baked! Here is the ironic thing..I started Freshly Baked in 05. My grandma Rose passed away years before. I only learned within the last year that she always wanted to open her own bakery. Call it fate? I hung her "Rose's Kitchen" sign in my kitchen and always feel she is the reason they're so good.
