This recipe is a creation from a recipe I have had and created some different ingredients to it and I love the newer version. This is the winner!
Raspberry/Chocolate/Marshmallow Squares
1/2 cup margerine
1/4 cup sugar
3/4 cup organic wheat flour
1/4 tsp. baking powder
1/4 tsp. salt
2 Tablespoons cocoa powder
2 eggs
1 1/2 tsp. vanilla (real)
1/2 cup chopped walnuts
1 cup mini marshmellows
3 Tablespoons Raspberry Jelly (Knottsberry Farm)
Cream margerine & sugar until fluffy. Sift dry ingredients. Add beaten eggs. Add vanilla and chopped walnuts. Spread into greased 12" x 8" pan. Bake at 350 for 25 minutes or more depending on your oven. Cover baked bars with marshmallows and Raspberry jam and return to oven for 2-3 more minutes When cooled. Frost with fudge frosting. Makes about 24 squares. Can purchase frosting from local store or make your own.
Fudge Frosting
1 square of chocolate
1/2 cup Brown sugar
1/4 cup water
1 Tablespoon margerine or butter
1 Tsp. vanilla (real)
Confectioners' sugar
Boil together 3 minutes . Remove from heat add vanilla. Cool slightly and add enough confectioners' suger to make a spreading consistency. |
