Swedish Ginger Cookies
1 cup butter (softened)
1 1/2 cups sugar
1 egg
1 1/2 tbs. grated orange peel
2 tbs. dark corn syrup
1 tbs. water
3 1/4 cups sifted all purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. ground cloves
Thouroughly cream butter and sugar. Add egg. Beat until fluffy. Add orage peel, corn syrup and water, mix well. Sift dry ingedients together. Add to the creamed mixture. Chill dough. On lightly floured surface, roll to 1/8 inch thicknes. Cut into desired shapes. Bake 8-10 mminutes at 375 degree oven. Makes about 8 dozen.
This was my Grandmother's recipe and a family favorite. Although you can technically use any shape when making these cookies we would cut ours into Gingerbread Men with raisin eyes and M&M buttons. After they cooled we would put on the finishing touches with different colored vanilla frosting. I now carry on the tradition with my daughters and they love it!
