Trailblazers
My kitchen is my solace. As a stay at home mom of three kids under four years old, the days can get hectic, long, and tiresome. When we need a break, we go to the kitchen to bake cookies. My four year and two year old love to help measure, mix, and of course, sample! My husband often brings our creations to work and his co-workers have even said I should consider selling my cookies! I got the inspiration for my Trailblazer cookies from a local bakery. While they do make a good cookie, I knew I could do better. I hope you enjoy them too!
Trailblazers
1 c. unsalted butter
3/4 c. sugar
3/4 c. light brown sugar
2 large eggs
1 tsp. pure vanilla extract
1 1/4 c. all purpose flour
1 tsp. baking soda
1/2 tsp. kosher salt
3 c. old fashioned oats
1 c. semi-sweet chocolate chips
1 c. butterscotch chips
1 c. craisins
1 c. slivered almonds
Mix together the butter, sugar and brown sugar until light and fluffy. Add eggs and vanilla and stir until combined. Stir in the flour, baking soda and kosher salt. Add the oats and mix well. Stir in the chocolate chips, butterscotch chips, craisins, and almonds. Refrigerate dough for 30 minutes. Drop cookies using an ice cream scoop on a parchment lined baking sheet. Bake for 9-11 minutes in a preheated 375 degree oven. Cool on wire racks.

Trailblazer is my kind of ingredient super cookie oats, almonds, craisins, and a mix of butterscotch and chocolate chips - WOW what a mouthful of crunch and flavors!
