Wheat Flour Oatmeal Cranberry
3/4 cup butter
1 1/2 cup brown sugar (packed)
1 tsp baking powder
1/4 tsp baking soda
2 Tbs ground cinnamon
2 egg whites
1 tsp vanilla
1 1/2 cup whole wheat flour
2 cups rolled oats
2 cups of fresh cranberries (best if freeze the fresh cranberries first)
Melt the butter in a saucepan or microwave.
Mix with brown sugar, baking powder, baking soda, and cinnamon.
Mix in wheat flour, and then rolled oats til even consistancy.
Add fresh cranberries (works best if you stick the cranberries in the freezer for a few hours beforehand).
Drop dough by rounded teaspons approx 2 inches apart on baking pan (I use cooking spray on the pan first)
Bake at 325 F for approx 10 min or till golden.

My story: I have always LOVED cookies----but, coming from a family that has a history of heart disease on my Mother's side, I'm also health-conscious and try to incorporate whole grains and fresh foods into my diet. I've been in search of a way to 'have my cookie and eat it too!', but ever cookie made with 100% whole wheat flour tends to taste like a rock! So, I made up this recipe---they stay unbelievably moist and are absolutely yummy!!!! (My theory is that the cranberries help keep them that way, despite using 100% wheat flour). They have been a HUGE hit at parties, picnics, etc, and I have lots of friends that request orders several times a year! No one ever believes me that they're a 'healthy' cookie because they taste so great!
