Almond Chip Cookies

These are a nice change of pace from traditional chocolate chip cookies -- they're almond flavored, and they use vanilla chips instead.

1/2 cup butter
1/2 cup almond butter (find at most supermarkets or health food stores)
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup slivered almonds
1 cup vanilla chips

Preheat oven to 375 degrees F. In a large bowl cream butter, almond butter, and sugars. Add egg and vanilla. In a separate bowl, stir together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients and mix well. Stir in cashews and vanilla chips. Form dough into 1-inch balls and place about two inches apart on an ungreased cookie sheet. Crisscross each ball with a fork. Bake for 10-12 minutes cool slightly and remove from pan. Makes 4 dozen.
