Annabelles 1 cup of soft unsalted butter �� cup of honey 2 eggs 1 teaspoon vanilla 1 �� cups of whole wheat flour 1 teaspoon baking soda 1 teaspoon cinnamon �� teaspoon of salt (optional) 3 cups of Quaker Oats (blended to a powder) �� cup of finely chopped walnuts �� cup of chocolate chips �� cup of butterscotch chips �� cup of coconut Beat the soft butter and honey together. Add the eggs and vanilla. Mix the flour, baking soda, cinnamon and salt in a separate bowl. Add the mixture and beat well. Add the blended oat meal. Mix in the chocolate chips, butterscotch chips and coconut. Drop 1 inch balls onto the cookie sheet. Bake at 350 degrees for 7 minutes. Cool on cookie racks! Annabelle���s gentle Cocker Spaniel eyes speak longingly of a warm, freshly baked cookie chunk that will inevitably drop to the floor. ���and when it does, she is in for a real treat. Of course, the little honey-oatmeal morsel will be gobbled up in a doggy flash! Four year old Annabelle, of course is my prize cookie. Her fur is the color of butterscotch and oats ��� coconut too! Her loving eyes and nose are as chocolaty as a sweet dark fantasy. Annabelle knows a special cookie when she smells her mom baking in the kitchen. Her quick little nutty colored tail tells all and can delight any heart.
