Combine:
1 cup sugar
1 cup brown sugar
1 cup butter
1 cup vegetable oil
1 cup oats
3 1/2 cups flour
1 tsp salt
1 egg
1 tsp vanilla
1/2 cup coconut
1/2 cup chopped pecans
1 cup crushed corn flakes
1 tsp baking soda
Preheat oven to 325 degrees. Mix all the above ingredients well. Drop by rounded tablespoons onto ungreased baking sheets. Bake for about 22 minutes. Immediately transfer cookies with a spatula to a wire rack.
This is a recipe I received from my Aunt Betty many years ago. It is a holiday favorite of mine, but I bake them year round. They are a true delight with a cold glass of milk or a hot cup of tea.
