Be My Baby Cookies
2 1/4 cups all-purpose flour
1 cup pecans, finely ground
1 1/2 teaspoons baking soda
1 teaspoon salt
1/8 teaspoon ground cloves
1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
2 eggs
1 teaspoon vanilla extract
1 teaspoon lemon juice
2 cups butterscotch chips
1 cup shredded coconut, toasted
In a medium bowl, combine the flour, pecans, baking soda, salt, and cloves mix well. Using a mixer, beat the butter in a large mixing bowl until fluffy, about 2 minutes. Add the granulated sugar and brown sugar and mix together until smooth. Add the eggs, vanilla extract, and lemon juice. Stir the dry ingredients into the wet ingredients mix well. Fold in the butterscotch chips, toasted coconut and mix by hand until the ingredients are well combined. For best results, chill the dough in the refrigerator for 6 hours before baking. Preheat oven to 350 degrees F. With a 1/4-cup scoop, portion out the dough onto an ungreased cookie sheet, placing the scoops 2 inches apart. Bake 15 to 17 minutes, or until the edges are golden brown but the centers are still slightly soft. Remove the cookie sheet from the oven and transfer the cookies to a wire rack. Cool for 10 minutes. Makes 20-24 cookies.
I first met my future husband when I was cooking a big feast for a New Year's Day party. He came to the party with another date but eventually my cooking won him over. In particular, I created these cookies for our first Valentine's Day and I think they are what put it over the top (although, I have to confess, it took a few Valentine's Day worth of cookies to make him propose--maybe he was just holding out for more cookies!) I wanted to create a cookie that was both familiar yet distinct at the same time. The combination of butterscotch, coconut, and pecan flavors really work together to create a truly unique and truly tasty cookie. I now make it every Valentine's Day for my husband. He really enjoys them. I am definitely my own woman, though, because as I was baking cookies I was working on my doctorate, and I now am a working psychologist. But at the same time, sometimes a little home-baked love is what it takes...
