Can't Make Up My Mind Cookies
I can't make up my mind about anything. I changed my major 8 times in college. I've had my hair every color of the rainbow. So why should cookies be any different? I can't make up my mind if I want vanilla flavored cookies with chocolate chip, or chocolate cookies with white chocolate chips. Now I just put the two together. It's the most delicious decision I've ever not made.
"Can't Make Up My Mind Cookies"
1 cup unsalted butter, at room temperature
1 cup dark brown sugar
1 cup granulated sugar
2 eggs, room temperature
1 tablespoon vanilla
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon salt
2 and 3/4 cups flour, divided (plus more if needed)
1/3 cup cocoa powder
1 cup white chocolate chips
1 cup semisweet chocolate chips
Preheat oven to 350 degrees. Line cookie sheets with parchment paper. In a large bowl, cream together butter and both sugars. Add eggs and vanilla. Stir in salt and baking powder and soda. Stir in 2 and 1/4 cups flour. Divide dough in half. Transfer half of dough to medium bowl stir in cocoa powder. Add white chocolate chips. Set aside briefly. To original cookie dough, add remaining 1/2 cup flour stir in semisweet chocolate chips. Form a 1 inch ball of each kind of cookie dough. Squish them together and form 1 large swirled ball. Repeat process with all of the cookie dough. Place on cookie sheets, two inches apart. Bake in batches, about 10-12 minutes each, or until just starting to become golden brown. Let cool for one minute on pans. Transfer to rack. Serve warm with tall frosty glasses of milk! These'll please everyone! Makes about 48 cookies.
