Chewy Chocolate Coconut Cashew
Ingredients:
2 1/4 Cups All-Purpose Flour
1/2 Cup Baking Cocoa
1 tsp. Baking Soda
1 Cup (2 sticks) Unsalted Butter - softened
3/4 Cup Brown Sugar
3/4 Cup Granulated Sugar
1 tsp. Vanilla Extract
2 Large Eggs
1 Cup Sweetened Flaked Coconut -- packed
1 Cup Chopped Salted Cashews
Directions:
Preheat oven to 375 degrees F. Combine flour, cocoa and baking soda in small bowl. Beat butter, brown sugar, granulated sugar and vanilla extract in large mixer bowl until creamy. Beat in eggs one at a time until light and fluffy. Gradually beat in flour mixture. Stir in coconut and cashews. Drop by heaping rounded tablespoon onto ungreased baking sheets. Bake 8 to 9 minutes or until cookies have spread and are done on the outside and a bit moist on the inside. Cool about a minute on baking sheets and remove to wire racks to cool completely. Makes about 2 dozen.

I wanted this cookie to capture exactly that! I created the Chewy Chocolate Coconut Cashew Cookie, with the sweet and salty combination of sweetened flaked coconut and salted cashews enveloped by a rich chocolate cookie!
