Chewy Chunky Chocolate Cherry
Chewy, Chunky Chocolate Cherry Oatmeal Cookies
1/2 c unsalted butter, softened
1/2 c shortening
1 c sugar
1 c brown sugar, packed
2 eggs
1 t almond extract
2 c flour
1 t baking soda
1/2 t baking powder
1 t salt
1 t cinnamon
2 3/4 c rolled oats
1 1/4 c semi-sweet or dark chocolate chunks
1 1/4 c dried cherries, cut into halves
Preheat oven to 350 F. In a large mixing bowl, cream butter, shortening and sugars with electric mixer until well blended. Add eggs and mix well. Stir in almond extract. In a separate bowl, sift together flour, baking soda, baking powder, salt and cinnamon. Stir into butter and sugar mixture, a little at time, until well blended. Stir in chocolate, cherries and oats. Roll dough into balls about the size of a ping pong ball. Place eight dough balls on a parchment paper lined (or well greased) cookie sheet. Place in refrigerator for 5 to 10 minutes to firm. Flatten slightly with a fork and place in oven. Cook for 11 to 13 minutes, until slightly golden along the edges. Remove from oven and allow to cool on cookie sheet for about 5 minutes before moving cookies to a wire rack to finish cooling. Makes about 4 dozen cookies. Enjoy! TIPS: Always start with a cold or room temperature cookie sheet. Allow dough to firm in refrigerator before baking. Begin preparing one sheet while another is baking. Extra dough freezes wonderfully in preshaped balls and can be baked later.

I have always loved to cook for as long as I can remember. I'm no professional, but I've come a long way since my milk and sugar "soup" days at 5 years old! I love to create new recipes with a favorite ingredient and to share with my friends, family and neighbors. New cookie recipes always make me happy, especially when my friends and family ask for more! I tried Trader Joe's dried bing cherries recently, and I just knew that I needed a recipe for them. I came up with a cookie recipe that won rave reviews from my family. My sister and brother-in-law couldn't stop eating them. My nephew did ask for one without any cherries. I was a little sad, but I was glad to make the cherries disappear for him! I only had two cookies left for the photo!
