ChocoCoconutCashewCookie

I took these cookies to a dinner party with friends one night and they were loved by all. This is a recipe that I modified to make healthier. We all know by now how good dark chocolate, coconut and cashews are for us and the addition of whole wheat flour adds fiber to the mix. These cookies are good enough to eat for breakfast!

1/2 c. butter
2/3 c. brown sugar
1/2 c. granulated sugar
1/2 tsp. salt
1/2 tsp. bkg soda
2 eggs
2 tsp. vanilla
1 1/2 c. white whole wheat flour (I prefer King Arthur)
2 c. sweetened flaked coconut
1 c. coarsely chopped cashews
1/2 c. semi-sweet chocolate chips
1/2 c. white chocolate chips

Beat the butter for about 30 seconds in a large bowl. Add the sugars, salt, and baking soda beat until combined. Add the eggs and vanilla, beat until combined and then add the flour. Stir in remaining ingredients. Drop by rounded tablespoons onto ungreased cookie sheet. Bake on top and lower rack of oven set to 325. After 7 minutes switch sheets and bake another 7 minutes or until just golden. Cool for a couple of minutes after removing from oven and then continue cooling on wire rack. Makes about 30 cookies.
