Chocolate Peanut Butter Patty
Mix Cookie Dough:
1 cup (8oz) softened butter
1 cup light brown sugar
3/4 cup granulated sugar
Cream together until light, then add 3 large eggs one at a time and scrape down the bowl.
Sift together:
2 1/2 cups all purpose flour
1/2 cup cocoa powder (use a dark, dutch process cocoa powder)
1 teaspoon baking powder
Mix into the creamed mixture until well blended. Cover and chill dough.
Mix the fillings:
Preheat oven to 300 degrees. Boil 2 cups heavy cream. Using two different bowls, empty an 11.5 oz. bag of milk chocolate chips into one bowl and a 10 oz. bag of peanut butter chips into the other bowl. Pour 1 cup of the boiling heavy cream into each of the bowls. Allow the chips to melt and stir to blend. Cover each of the bowls with plastic and refrigerate until needed. Scoop the cookie dough into approximately 1 inch balls and set on a parchment lined cookie sheet. Press down slightly. Bake 15-20 minutes (depending on the oven) or just until set. Cool. Loosen cookies from the parchment paper and turn them upside down. Fill two pastry bags, one with each filling. Pipe a small amount of the chocolate filling on half of the cookies and pipe the peanut butter filling on the remaining cookies. Pick up one cookie of each flavor filling and press them together so the filling comes to the edge slightly. Crush Reeses pieces candy and press them into the filling. The candy will stick to the filling. Enjoy!!
This cookie recipe is one that we have made for Christmas for years. I wanted to make something different for a sweet table, using the peanut butter cup flavors. I used the cookie recipe and decided to make it into a sandwich cookie. When I played around with the fillings,everyone decided that two flavors of cream was the best! The Reeses pieces came in when I wanted to add some crunch to the soft cookie with the creamy filling. Everyone enjoys this cookie because it is unusual to have a homemade sandwich cookie!
