Chocolate Peanut Oat Cookies

Thirty years ago Chocolate Chip, Peanut Butter, and Oatmeal Cookies were among the top favorite cookies. They still are, and now we are even told that they contain things that have health benefits. Chocolate, peanut butter, and oatmeal may actually be good for us. All this good stuff is combined into one cookie for a new favorite.

1 cup semi-sweet chocolate chips, divided
1/3 cup granulated sugar
1/3 cup brown sugar, packed
6 tablespoons butter, softened
1/3 cup super chunk peanut butter
1 egg
1/2 teaspoon vanilla
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup rolled oats
1/4 cup white morsels

Preheat oven to 350 degrees F. Melt 1/3 cup of the chocolate chips in medium bowl. Stir in sugars, butter, and peanut butter, mixing well. Add egg and vanilla. Beat until combined. In small bowl, stir together flour, soda, and salt add to egg mixture, mixing until combined. Stir in oatmeal and remaining chocolate chips. Drop dough by rounded teaspoons 2 inches apart on ungreased baking sheet. Bake for 10 to 15 minutes or until cookies are slightly cracked on top and set at edges. Transfer to a wire rack. In small dish, melt white morsels, stirring until smooth. Drizzle in zig-zag pattern over tops of cookies. (A plastic sandwich bag with corner snipped works well.) Cool until white chocolate is set. Makes about 28 cookies.
