Cranberry White Chocolate Chip
2 sticks softened butter (1 cup)
3/4 Cup granulated sugar
1 cup brown sugar
2 eggs
1 Tb. Pure vanilla
1 Cup old fashioned oats
2 cups flour
3/4 tsp. Salt
3/4 tsp. Baking soda
3/4 cup pecans-finely chopped
1 cup dried cranberries
2 cups white chocolate chips
Blend butter and sugars, add eggs & vanilla. Mix in oats, then four with salt & soda. After ingredients are combined add nuts, cranberries, mixing then adding chocolate chips. Bake at 375 on an un-greased cookie sheet for 13-15 minutes.
I love to experiment with new recipes and have our family and friends critique my new creations. I tried a few new recipes for my friends & family to try and this was the overwhelming favorite with a perfect blend of flavors. No one taste stands out so I can't really call it an oatmeal or a chocolate chip or fruit & nut. This is a recipe that must be tried to be appreciated! I know this recipe is a winner.
