Dark Chocolate Cranberry Bliss
1/2 cup unsalted butter
2 eggs
1/2 cup sugar
1/2 cup light brown sugar
1/2 cup dark brown sugar
2 tsp. vanilla extract
2 1/4 cups flour
1/2 tsp. baking soda
1 tsp. salt
2 tsp. ground allspice
7 oz. dark chocolate chips
5 oz. cranberries
Preheat oven to 375 degree F. Line cookie sheets with parchment paper. In one bowl, stir in the butter (softened), eggs, sugars, and vanilla until well mixed. In another bowl, stir together the flour, baking soda, salt, and allspice. Mix the bowl with the flour into the bowl with the sugars. Then add the dark chocolate chips and the cranberries and mix in well. Spoon the batter into balls on the cookie sheets. Insert in oven and cook for approximately 14 minutes until brown but still soft. Let cool before eating.
I dreamed of this decadent cookie one night after having a dinner party with some of my friends. We were talking about how our tastes have changed so much. We all have been out of college for a just a few years and in that time we've gone from drinking beer to drinking red wine, from not really looking at what we eat to being health-conscious. We also experiment a lot more with cooking at home. With that I thought, "If I was going to make a cookie that reflects who we are now, what would that cookie be?" From that came the Dark Chocolate-Cranberry Cookie, bursting with antioxidant rich cranberries and mouth-watering, heart-healthy dark chocolate. The perfect way to unwind and pamper yourself after a long day (or at the beginning or in the middle of your day...this cookie is good anytime!).
