Double Chocolate Cherry Gems
Ingredients:
3 / 4 c. Crisco
1 1 / 4c. packed golden brown sugar
2 T whole milk
1 T vanilla extract
1 large egg
1 3 / 4 c. All-Purpose flour
1 t. salt
3 / 4 t. baking soda
1 t. ground cinnamon
1 c. semi-sweet chocolate chips
1 c. white chocolate chips
1 c. dried tart cherries
Directions:
Preheat oven to 375 degrees and place oven rack in middle of oven. Place Silpats or parchment paper onto 3 cookie sheets and set aside. In a large bowl or standing mixer, beat the shortening, brown sugar, milk, and vanilla until. Beat in egg until well-incorporated. Combine the flour, salt, baking soda, and cinnamon in a small bowl until just combined. Mix the flour mixture into the shortening and sugar mixture until blended. Stir in the chocolate chips (both kinds) and cherries. Drop by rounded spoonfuls onto a cookie sheet, placing 1-2��� apart. Bake one sheet at a time for 12 minutes or until golden on the top. Let cool for 1 minute before transfering to a cooling rack. Makes about 3 dozen.
Having a gourmet cook for a father made for a delightful, delectable childhood filled with exquisite menus, mouth-watering kitchen aromas, and an insatiable appetite for quality dishes. This was where my love of desserts and creating quality comfort treats came from, and I am forever in debt to my dad for instilling in me a love of baking. Following my dad's incredible dinners, our family always loved finishing it off with a yummy dessert. It was a challenge to see who could satisfy the dessert-lover's palate the most that night. Early on, I became fascinated with the artistry of creating baked goods just to see the reaction from the person indulging in the treat. When I became a teacher, I soon realized that my passion for baking was the perfect stress reliever after a long day with my students. Coming home and baking for hours on end, surprisingly, would calm every frazzled nerve and prepare me for the next day's tasks. This recipe comes from my dad's love of chewy chocolate chip cookies, my mom's love of fine white chocolate, and my own love of cherries blended with velvety chocolate.
