(ALSO KNOWN AS "A FIELD OF HEALTH OATMEAL, NUT, RAISIN, EGGLESS COOKIE")
3 CUPS ALL-PURPOSE FLOUR
2 TSP. BAKING SODA
1 TSP. SALT (OPTIONAL)
2 CUPS BUTTER-ROOM TEMPERATURE
3 CUPS PACKED BROWN SUGAR
1 CUP APPLESAUCE
4 TSP. VANILLA EXTRACT
2 TSP. CINNAMON
1 CUP CHOPPED WALNUTS
2 CUPS COCONUT
6 CUPS OATS (OLD-FASHION-NOT INSTANT)
2 CUPS RASINS
PREHEAT OVEN TO 350 DEGREES F. COMBINE FLOUR, BAKING SODA, AND SALT IN MEDIUM BOWL WITH WIRE WISK SET ASIDE. BEAT BUTTER AND BROWN SUGAR WITH ELECTRIC MIXER ON MEDIUM SPEED IN A LARGE BOWL UNTIL WELL COMBINED. MIXTURE SHOULD APPEAR GRAINY IN TEXTURE. BE SURE TO SCRAPE SIDES OF THE BOWL AND ADD APPLESAUCE, VANILLA EXTRACT, AND CINNAMON BEAT UNTIL BLENDED. GRADUALLY STIR IN FLOUR MIXTURE JUST UNTIL BLENDED. STIR IN BY HAND THE CHOPPED WALNUTS, COCONUT, OLD FASHION OATS, AND RAISINS. CHILL DOUGH FOR 1/2 TO 1 HOUR BEFORE BAKING. DROP COOKIE DOUGH AS DIRECTED (A BAKING STONE IS BETTER FOR THIS RECIPE): SCOOP DOUGH WITH SMALL ICECREAM SCOOP. EACH SCOOP SHOULD BE A HEAPING SCOOP...ALMOST DOUBLE IN SIZE OF SCOOP. ONCE YOU DROP DOUGH (3 INCHES APART) ONTO UNGREASED BAKING STONE, THE DOUGH FOR EACH COOKIE IS HEAPING. DO NOT FLATEN THE COOKIE DOUGH. BAKE FOR 28 MINUTES UNTIL GOLDEN BROWN ON LOWER RACK ON BAKING STONE AT 350 DEGREES F. EACH COOKIE IS APPROXIMATELY 5 INCHES IN DIAMETER WHEN FINISHED BAKING. COOL COOKIES FOR 1-2 MINUTES ON BAKING STONE AND TRANSFER GOLDEN BROWN COOKIE ONTO PARCHMENT PAPER SITTING ON A COOL SURFACE FOR THE SOFT DELICIOUS COOKIE TO COOL. THE COOKIE WILL HAVE A SLIGHT GLAZE APPEARANCE ON TOP. ALLOW THE BAKING STONE TO COOL 10 - 15 MINUTES. BE SURE TO SCRAPE THE EXCESS CRUMBS OFF OF THE BAKING STONE BEFORE BAKING THE NEXT BATCH. MAKES APPROXIMATELY 30 COOKIES (2 AND ONCE HALF DOZEN).
WHEN I WAS YOUNG, MY GRANDMA AND I BAKED COOKIES TOGETHER WHAT A WONDERFUL MEMORY!!! GRANDMA AND I WOULD GET THE FLOURBOARD OUT TO MAKE COOKIES. WE ALWAYS SEEM TO HAVE MORE FLOUR ON US THAN ON THE FLOURBOARD. WHEN I WOULD GO BACK HOME WITH THE COOKIES...THE COOKIES WOULD BE GONE BEFORE I COULD BLINK MY EYES. I STARTED BAKING MORE COOKIES AT HOME AND TRYING NEW RECIPES. "ARE YOU EXPERIMENTING WITH NEW RECIPIES AGAIN?" MY DAD, MOM, OR FIVE BROTHERS WOULD ASK BECAUSE THEY KNEW THEY WERE TEST SUBJECTS FOR NEW RECIPES. AFTER YEARS OF BAKING, MY COOKIES ARE NOW NOT THROWN AWAY. THIS FIELD OF DREAM RECIPE HAS BEEN AN EXPERIMENT ON MY HUSBAND AND DAUGHTER. I HAVE CONTINUED OVER THE YEARS TO BUILD THE BEST COOKIE RECIPES AND YES THEY ALL COME WHEN THE FAMILY KNOWS I HAVE BAKED THE PERFECTED COOKIES I HAVE EXPERIMENTED ON THEM FOR YEARS. THIS COOKIE HAS NO EGGS OR COOKING OIL OR WHITE SUGAR MAKING IT HEALTHIER. IT IS GOOD FOR THOSE ALLERGIC TO EGGS. THE COOKIE HAS COCONUT TO HELP THE COOKIE BE MORE MOIST AND APPLESAUCE TO HELP HOLD THE COOKIE TOGETHER. TO ADD TO HEALTHINESS, THERE ARE NUT, RAISINS, AND LOTS OF OATMEAL.
