This recipe just came together. My very best friend Kathy and I were talking about the contest trying to figure out what would make a great cookie. We tossed a few ideas around and finally came up with this one. I had to make the recipe 5 or 6 times before mastering it. I tested them out on almost everyone I know and they loved them. Some said they tasted like a coffee cake. Other said they tasted like apple crisp. They are lightly crisp on the outside and chewy on the inside. A perfect combination. I hope you love them as much as my friends and family did. Enjoy
