Hot Chocolate Chip Cookies

2 �� c. flour 1 tsp. baking powder 1 tsp. salt 1 c. butter, room temperature �� c. granulated sugar �� c. light brown sugar, packed 1 tsp. vanilla 2 tsp. milk 2 eggs 3 rounds Ibarra chocolate, chopped Preheat oven to 375��. Line baking sheets with parchment paper. Combine flour, powder and salt in a bowl and set aside. Beat butter, both sugars, vanilla, and milk in a bowl until well mixed. Add eggs. Gradually mix in flour (preferably hand mix). Add chopped Ibarra chocolate and crumbs, mixing well. Drop tablespoons of dough onto prepared cookie sheets. Bake 10 minutes. Cool slightly on sheets, then remove and allow to cool on wire racks completely. Makes approx. 3 dozen cookies. This recipe came about from one of my family���s annual Baking Day in December. We get together with family and friends to bake for he holidays. Whether the goodies are for each other or as gifts, we always share recipes and have a good time. It���s an event my sister, mom, and I came up with many years ago when we used to babysit. In an effort to help the parents who we babysat for, do a little holiday shopping, we invited all the kids over to bake, watch holiday movies and share some pizza. As years passed, it made it an adult event and as we started having children, we made it a family event. This recipe is a product of this annual event. Growing up, my Grandmother would make us Mexican Hot Chocolate with the Ibarra bars. It wasn���t your normal hot chocolate, as it was sweeter and took a lot more time to prepare. She had to warm the milk and we had to patiently wait as the chocolate rounds melted. But it was well worth it. The chocolate and the cinnamon mixed together was nothing short of amazing. It was my favorite hot chocolate. As a result, I decided one day to chop up the bars and bake them into a cookie. If we could have cinnamon sugar cookies or chocolate chip cookies, then why not Mexican Hot Chocolate Chip cookies! Much to the happiness of my family���s sweet tooth, I have come up with a recipe that I love to share. There are a few variations to my cookie. Sometimes I chop the chocolate so fine that all that���s left is the ���dust��� and instead of chunks or chips to bite into, there���s a nice mild flavor. Another way is to chop the chocolate into small pieces. Either way, the flavor is unforgettable and irresistible.
