Iced Orange Slice Cookies
1 stick (1/2 C) unsalted butter
1 C granulated sugar
1 Large egg
2 C all-purpose flour
2 teas. Baking powder
½ tea. Salt
1 tea. vanilla
1/3 C buttermilk
2 teas. Orange zest
1 C chopped dates
1 C chopped pecans
1 C chopped walnuts
1 C coconut
1 C chopped orange slice candies
Icing:
4 T softened cream cheese
1 tea. Orange zest
1 tea. Orange juice
½-2/3 C powdered sugar
In a medium bowl, combine flour, baking powder, and salt. In another medium bowl, cream together the butter and sugar using a hand mixer. Add egg and beat to incorporate. Add milk, extract, and zest. Stir the dry ingredients into the wet ingredients. Fold in dates, pecan, walnuts, coconut and candy. Chill the dough in the refrigerator for 30 minutes. Preheat the oven to 375 degrees F. Drop 1 heaping tablespoon of dough onto cookie sheets. Bake until golden brown around the edges, about 15 minutes. Cool the cookies on a wire rack. Ice. Prepare icing by working cream cheese, orange zest and orange juice together with the back of a spoon until combined. Stir in enough powdered sugar to obtain a spreadable consistency.
These cookies are based on a pound cake that my mom used to make for us when I was a kid. She has since passed on, and the recipe for the pound cake is gone, but I remember fondly the taste and smell of a time long ago every time I make these.
