Jetlag Cookies

Makes: 16-24

INGREDIENTS:
1 cup butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon coconut extract
1 and 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups uncooked oatmeal
1 cup dried cherries
1 cup chocolate covered raisins

PREPARATION:
Heat oven to 350 degrees. In a large mixing bowl, beat the butter and sugars together. Add the eggs and extract and mix. Add the flour, baking soda and salt and mix well. Stir in the oatmeal, cherries and chocolate covered raisins. Drop by heaping tablespoons onto cookie sheet and bake for 12-15 minutes.

NOTE: Dried cherries are thought to help prevent jetlag. What a great cookie for airlines to serve!
