"Jimbos"
These cookies came to be after a co-worker suggested that I combine two my most popular cookies that I bring to work on a regular basis. They were such a hit with everyone that I named them after him (Jim), and the Peanut butter and chocolate "Jimbo" was born.
Step 1: Make the peanut butter filling, which is actually a cookie you can make all by itself called a Buckeye.
2 Lbs Peanut butter, I like chunky.
1 Lb Butter
3 Lbs Powder Sugar
Blend till smooth and roll into quater size balls (To make just the Buckeyes, dip rolled balls in melted chocolate, to make the "Jimbo" go to step 2) This recipes make a huge quantity of Buckeyes but it can easily be cut down and still works out great.
Step 2: The Peanut Butter Cookie
1 C. Shortening
1 C. Peanut Butter, again I use chunky
1 C. Sugar
1 C. Brown Sugar
2 eggs
1 tsp vanilla
2 1/4 C. Flour
2 tsp baking soda
1/4 tsp salt.
Bake 350 for 11 min.
Step 3: Melt 1 package chocolate chips or waffers which ever you prefer.
After the cookies have cooled paint the bottom of one cookie with the melted chocolate, take one of the buckeye balls and flatten in the palm of your hand to fit the cookie and place it on the painted chocolate. Paint the bottom of another cookie and place it on top to make a sandwich and that's it, you have made you first Jimbo, and trust me once people eat them it won't be your last! I like to drizzle any left over chocolate on top, not only because it looks good but you can never have too much chocolate. I hope anyone who tries this recipes enjoys it as much as I do.
