Jimmy Toon’s Mocha Truffle Cookies

½ cup butter
1 cup chocolate chips
1 tablespoon instant coffee
1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
2 teaspoon vanilla
2 cups flour
1/3 cups unsweetened cocoa
½ teaspoon baking powder
¼ teaspoon salt

Preheat oven to 350 degrees F. Melt all the butter with ½ cup of the chocolate chips. When completely melted, add coffee and cool for 5 minutes Combine flour, cocoa, baking powder, and salt. Put chocolate mixture in a mixing bowl mix in eggs, vanilla and sugars. Gradually add the dry ingredients. Fold in the remaining 1/2 cup chocolate chips using a cookie scoop, place on an ungreased cookie sheet and bake for 10 minutes. cool on rack. Preparation Time: 30 minutes.

The best story about these cookies is that my best friend gave the recipe to a friend who was visiting from China because she loved the cookies so much. Then a couple of years later we were sent a (translated) clipping from a big Chinese newspaper that touted the recipe as being "Jimmy Toons (my nickname) "World famous" cookies. The article went on to say the cookies were "Sweeping the country" So in China, they've got their rock star statues, please Mrs. Fields, pick my cookie so we can make them famous here in the US too!!
