Junior's Gooey PB Cookies

3/4 c peanut butter
1/2 c shortening
1 1/4 c packed brown sugar
1 egg
3 Tbsp milk
1 Tbsp vanilla
1 c all-purpose flour
3/4 c wheat flour
3/4 tsp baking soda
3/4 tsp salt
1 c semisweet chocolate chips
1/2 c mini marshmallows

Preheat oven to 350. Grease cookies sheets. Cream together the peanut butter, shortening and brown sugar. Stir in the egg, milk and vanilla. Sift together the all-purpose flour, wheat flour, baking soda and salt, add to the creamed mixture. Mix until just combined. Finally, stir in the chocolate chips and marshmallows. Drop cookies by rounded teaspoonfuls onto the prepared cookie sheets. Bake for 8-10 minutes or until golden brown. Gently drop cookie sheets to flatten the cookies (optional). Allow cookies to cool for 1 minute on the baking sheets before removing to wire racks to cool completely.

When I was in the hospital after having my son, Junior, I had these really moist peanut butter cookies. I'm not a fan of the usual peanut butter cookies because they are too dry and boring. After having these really good pb cookies I search everywhere to find a recipe that was similar. I ended up finding a recipe that seemed interesting because of the chocolate chips as well as the marshmallows. I changed the recipe some because it called for rye and I have wheat for the bread I already make for my family. We also changed the name since it was my son's birth that influenced the search for a peanut butter cookie recipe. This cookie has become one of 4 cookie recipes that my family absolutely love. Because we love it so much I normally double the recipe and then we give some to our friends and neighbors. They are always so excited when we bring cookies around. We've had many friends tell us that they need our cookie recipes because they are so good. My husband is trying to get me to market them and start my own business of doing cookies and other desserts since I love to bake. Baking is one way for me to release any stress. I especially love to bake for my family and friends and am so glad that they enjoy my efforts.
