Lime Zingers
3 limes, zested and juiced
1 cup butter
1 1/3 cup sugar
1 tsp vanilla
2 eggs
4 cups flour
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 cup jalapeno or lime-flavored jelly beans, chopped, optional
2 cups confectioners sugar
1 1/2 tsp lemon-lime unsweetened soft drink mix
Preheat oven to 400 degrees F. Pour juice from limes into small saucepan. Cook on medium-high until mixture reduces to 1/4 cup, about 3 minutes. Set aside. Mince the lime zest. Cream the lime zest with the butter and sugar until light. Add the vanilla and eggs and beat until the mixture becomes fluffy. Add the reduced lime juice and mix until combined. In a medium bowl combine the flour, salt, baking powder and baking soda. Add the dry ingredients to the creamed mixture. Stir in jelly beans. Chill the dough for at least one hour. Combine confectioner's sugar and soft drink mix in a medium-size bowl. Dust the rolling surface lightly with flour and, with a flour dusted rolling pin, roll the cookie dough out until it's about 1/4-inch thick. Cut out 3-inch circles with a cookie cutter. Place cookies on a lightly greased cookie sheet and bake for 8 to 10 minutes. They are done when the edges are crisp and light brown. Place cookies, 2 or 3 at a time, into the bowl with the confectioner's sugar and, using a spoon, cover cookies with the sugar. Gently shake off the excess sugar. Place cookies on a cooling rack until completely cool. Makes 40 cookies.
This is a cookie I made up. I was looking for something with FLAVOR and reducing the lime juice and adding jalapeno jelly beans hit just the right spot. I hope you enjoy them as much as I do.
