Michaela's Cinnamon Cookie

1 cup brown sugar, 1/2 cup white sugar, 1/2 cup butter, 1/2 cup shortening (butter flavor), 2 eggs, 1 teaspoon almond extract (may use imitation), 2 cups flour, 1 teaspoon baking soda, 1 3/4 - 2 teaspoons cinnamon (I used korintje cassia), 1 teaspoon salt, 1 cup cinnamon chips. Beat together sugars, butter and shortening. Add eggs and almond extract and beat until light in color. Mix together flour, baking soda, cinnamon and salt. Gradually add to creamed mixture just until blended. Add cinnamon chips and stir by hand just until mixed. Using teaspoon scoop mixture into a heaping teaspoon and remove from spoon dipping one side into demerara sugar. Place onto cookie sheet sugar side up. Bake in a 350 degree over for approximately 12 minutes.

I started making these cookies because my grandaughter, Michaela, developed a nut allergy to foods. Since she loves cookies and also cinnamon I created this recipe for her. This year is also my 30th (wedding) anniversary which was May 7th, so it only seemed fitting to submit my recipe. And yes, not only does my grandaughter love these cookies, the rest of the family does too! For the ones that can have nuts, I sometimes make a variation to this recipe by adding a bag of macadamia nuts and chocolate chips that are already blended and add this to the original recipe. These too are good! I hope you enjoy these as much as we do!
