Minty-rrific
1 cup all purpose flour
3 heaping tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter
2/3 cup (packed) brown sugar
1/4 cup sugar
1 egg
1 teaspoon water
1 teaspoon vanilla extract
2 teaspoons peppermint extract
1 bag semisweet morsels
Preheat oven to 325 degrees F.
Sift flour, cocoa, baking soda, and salt into bowl. Beat butter and both sugars in bowl until well blended. Add egg, 2 teaspoons water, vanilla, and peppermint blend well. Beat in flour mixture. Stir in chocolate chips. Drop dough by tablespoonfuls onto baking sheets. Bake 9-11 minutes - cookies should be just set.
My husband has a substantial sweet tooth, so for our first Christmas together (we weren't married at this point) I thought it would be nice to create a cookie just for him. I hadn't been baking for very long at this point, so I read articles online and in cookbooks to help me decide on proportions of ingredients. The final recipe was definitely not my first try, but he calls it "a keeper".
