Mocha Chia Chocolate Cookie
Chewy Mocha Chai Chocolate Chip Cookies
2 sticks butter
2 cups all-purpose flour
1/4 cup cocoa powder
1 teaspoon salt
1 teaspoon baking soda
2 tablespoons Chai Spice (see recipe below)
2 cups dark brown sugar
1 large egg
1 egg yolk
2 tablespoons milk
1 teaspoon vanilla extract
12 oz semisweet chocolate chips
Chai Spice
1/2 teaspoon white pepper
1/2 teaspoon ground cloves
1 teaspoon cinnamon
1 teaspoon cardamom
1 teaspoon ginger
1 teaspoon freshly grated nutmeg
Preheat oven to 350 degrees F. Melt butter in a saucepan over medium heat. Sift together flour, cocoa powder, salt, baking soda, and Chai Spices. Cream the melted butter and brown sugar on medium speed. Add egg, egg yolk, milk and vanilla. Mix until well combined. Slowly add the sifted flour mixture 1/4 cup at a time until combined. Stir in 1 3/4 cups of chocolate chips. (Reserve the remainder of the chips for later.) Chill dough in refrigerator for a minimum of 30 minutes. Scoop dough by rounded tablespoonful onto greased baking sheet and bake for 9-11 minutes. Be sure to check halfway through and rotate pan if necessary. Once cookies are cooled, melt the remaining chocolate chips over a double broiler. Drizzle the melted chocolate over the cooled cookies. Enjoy!!(Yield: 3 dozen)
