Mocha Mint Chocolate Chunk

As a wife and mother of two who works full-time and runs a small cookie company, I'm always looking for an extra jolt to keep me going (and new cookie recipes!). Many women can relate to the exhausting task of juggling the hats of employee, wife, mother, etc. and rely on their morning coffee to get the day started. I can't even speak to my mom in the morning if she hasn't had her first cup! So, the idea of incorporating the taste of coffee into a cookie sounded like a winner. With the amazing success of Starbucks and the fact that thousands of people have made stopping there on the way to work part of their morning routine, I know that the Mocha Mint Chocolate Chunk cookie will appeal to the masses. Not only is it delicious by itself, but eating it with a cup of hot coffee or tea is heavenly!

Mocha Mint Chocolate Chunk Cookie Recipe:

2 Cups All Purpose Flour
2/3 Cup Suisse Mocha Coffee Drink Mix
1/3 Cup Cocoa Powder
1 Teaspoon Salt
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
2 1/2 Sticks Unsalted Butter, Softened
1 1/2 Cups White Granulated Sugar
1 Teaspoon Vanilla
2 Large Eggs
2 Tablespoons Water
1 1/2 Cups Andes Creme De Menthe Baking Chips
1 1/2 Cups Nestle Chocolate Chunks

Pre-heat oven to 350 degrees. In a small mixing bowl, stir together all dry ingredients. In separate mixing bowl, mix (with beater) softened butter and sugar. Add vanilla and eggs. Beat well. Add 1/2 of the dry ingredient mixture. Beat well. Add water. Add remaining dry ingredients. Beat well. Stir (with spoon) in Andes mint Baking Chips and Chocolate Chunks. Using a 1-inch cookie scoop, place rounds on cookie tray lined with parchment paper. Place cookie tray in refrigerator to chill for 20 minutes. Place cookie tray in oven for 14-16 minutes. Allow cookies to cool for 2 minutes on cookie tray before placing them on cooling rack for at least 10 minutes. Makes 6 dozen. Cookies will be soft and chewy on the inside and crunchy around the edges. Enjoy!
