Mrs Buckles Frosted Rasberry Sugar Cookies
1 Cup Butter (butter only)
2/3 Cup Sugar
2 cups all purpose flour
1/2 tsp almond flavoring
1/2 tsp vanilla
1/2 cup rasberry jelly
Frosting:
1/4 cup butter
1/4 cup cream cheese
2 tsp milk
1/2 tsp almond flavor
1/2 tsp lemon flavor
1/2 tsp vanilla
1 1/2 cup powder sugar
Combine butter, sugar, almod, vanilla and mix until creamy. Add flour, mix will. Scrape all dough into a ball shape put into refridgerator for minimum 30 minutes. Then use a 2 ounce cookie scoop, spoon out and form dough into a ball, flatten cookie dough and use a regular spoon to dent the dough, creating an indent to place rasberry into. Fill indent with the rasberry jelly. Cook at 350 degrees oven for 10-12 minutes, makes 2 dozen delicious cookies. Frosting: Mix all ingredients well. Drizzle on top of cookies (after baking) while they are still slightly warm.
My cookie story started when I was in second grade in school where I had a teacher was so kind to me (I still remember her warm, sweet smile to this day). This was my first year to this school because the school boundaries changed over the summer. Her name was Mrs. Buckles. In her class,I would write stories about our family's cottage in Harrison, Michigan. It turned out that Mrs Buckles also had a cottage in Harrison. Unfortunately, the union my dad was in went on strike, and we could no longer afford to keep the house and had to give it back to the bank.
Well, I wrote a story in Mrs Buckle's class telling about how we were about to go up for our last trip to move our things out. As compassionate as she was, she invited my dad and I over to her cottage. She offered us some cookies that we loved - especially my dad (shortbread cookies were his favorite) As time went on at school and I was still writing stories about how sad I was about missing our cottage and spending time with my dad. Knowing how sad I was, Mrs Buckles gave me her recipe for the shortbread cookies. That is when my love for baking started, I would bake her recipe every chance I had. My father since passed away. I still bake these cookies for my kids and I always think about my dad and our cottage every time I make a new batch
