Pat's Toffee Cookies
This recipe was made every year by my ex mother in-law. It took me about three years to master the recipe.And believe it or not. No eggs in here.It's all about how you cream the butter. Now that she has moved to Aruba, I keep the family tradition alive. Let me tell you, they are the BEST!!!
2 3/4 cup flour
1/4 cup cake flour
1 1/4 tsp salt
3 sticks butter softened ( very important)
1 1/3 cups sugar
2 1/2 tsp vanilla
1 bag toffee bits
1 bag chocolate chips
1 cup walnuts chopped
Preheat oven to 350*. Line cookie sheets with parchment paper. Sift together flours & salt in small bowl. In electric mixer cream butter low speed for 5 minutes (wait the full 5). Slowly add sugar in, in 2 additions, letting it mix 2 minutes after each addition. Add vanilla. Slowly mix in sifted flour mixture. Stir in chocolate chips, tofee bits, and nuts. Drop by teasponful on parchment lined cookie sheets. Bake 15 minutes. Watch them carefully. They are to die for.
